Jamaican Johnny Cake with Eggs & Cheese

These light and crispy Johnny Cakes are just delicious and easy for breakfast. I made It pretty simple and easy. Usually, the Jamaican traditional Johnny Cake is made round in a ball shape and serves with the national dish Ackee & Saltfish or Calaloo, Mackerel among many others.
In my version, I made them flat and thick on the inside to be able to cut in the center and add my eggs and cheese. Just so you know, I only added eggs and cheese because that was my preference, wasn’t feeling for bacon or ham. However, you can add bacon and/or ham to make your cakes a lot more interesting and to your liking.

Ingredients
  • 2 Cups All purpose Flour
  • 1 tbsp Baking powder
  • 2 tbsp Butter or Margarine
  • 1/3 cup Water or Milk You can use milk or water its just as tasty with either.
  • Cooking Oil
  • 1/2 tsp Salt
TO MAKE EGG & CHEESE
  • 4-6 Egg
  • 1 tbsp Butter
  • Salt & Pepper to taste
  • Cheese of Choice

Johnnycakes Jamaican Fried Dumpling
Instructions
  1. Heat cooking oil at medium heat in a deep skillet.
  2. In a mixing bowl, combine flour, baking powder, salt and butter.
  3. Rub the butter into the flour mixture, then add the milk OR water until it dissolved and a dough form is made.
  4. Divide the dough base on the size dumplings you would like to make. You can do them flat like mine or do them round like a ball.

  5. Add dumplings to the frying pot until they are golden brown on all sides. After frying place them on a plate lined with paper towel so that the oil drains onto it.
EGG & CHHESE
  1. In a skillet add butter and fry the eggs just as how you like them, make sure to add salt pepper and spices (optional) NB. 2 eggs at a time.
  2. Place the cheese over the egg for 1 minute to melt.
  3. When your done you should end up with roughly, 8 dumplings and 2 seperate fried egg with cheese on top.
  4. Cut the egg and cheese in 4 quarters and divide them amoung the dumplings.
  5. Garnish with shredded cheese.
Recipe Notes
  • Make sure the butter is not to hard or melted. When it is soft, it will easily rub in with the dough mixture.
  • If the dough is too hard, add a little more milk or water; If is too soft add more flour.
