In a soup pot bring to boil beef ribs, pigtail, kidney beans, 1/2 garlic, 1/2 thyme, 1/2 pimento, 1/2scallion, ginger, salt for 2 1/2 hrs on medium heat.
If you are using salted beef, or salted pigtails do not add salt.
If you are using a pressure cooker it should take 1 1/2 hrs to cook the peas and the meat.
When the meat and peas are tender add dumplings, carrots, potatoes, and sweet potato. Let that cook for 15 mins
If you have other ground provisions you would like to add or take away by all means do so. Some people like to add breadfruit, other forms of yams, cassava, turnips to name some.
After 15 mins add the whole scotch bonnet pepper, butter, noodle packet or bouillon, coconut milk, and the remaining thyme, garlic, scallion, and pimento. And let it simmer for another 10mins. Check for the taste and adjust salt, bouillon, or butter accordingly if necessary.
