This Sweet and Spicy Jerk Lamb Chop is sweet, spicy, tender, and divine. Jerk can be combined and infused with almost anything. So versatile.

Equipment

Ingredients
  

  • 4 pieces of lamb chop
  • 3 tbsp jerk marinade varies
  • Salt
  • ¼ cup honey
  • ¼ tsp cinnamon
  • Sprig Thyme
  • Dill
  • 1 tbsp Olive oil
  • 1 tbsp Butter

Sides (Optional)

  • 1 ½ cup cherry tomatoes
  • 1 cup medium cube potatoes

Instructions
 

  • Preheat your oven to 400 degrees.
  • Rub salt and 2 tbsp jerk marinade or sauce on the lamb chop and marinate. Marinating is optional.

Sauce

  • In a bowl add honey, cinnamon, and remaining jerk marinade and mix together. Set aside.

For the sides

  • In a pot boil peeled whole potatoes ¾ of the way. Remove, then cut into cubes and set aside.
  • Set aside your cherry tomatoes for later.
  • In a cast-iron heat oil and butter on medium to high heat and add lamb chops. Brown on each side (no more than 1-2 mins on each side or until brown. Add tomatoes and potatoes to the pot, then add sauce and mix everything in. Then place in the oven and cook for at least 5- 7 mins.
  • If you like to add more color to your veggies and lamb you can broil for 1-2 mins.
  • Garnish with dill and serve as you like.
