single okra
½
cup
coconut flour
1
oz
all-purpose flour
1
oz
cornmeal
1
tbsp
cajun seasoning
Salt to taste

eggs
Oil for frying
Instructions
Start by preparing the okra, cut the ends off the okra.
Use a mallet and smash the okras from top to bottom. (Optional)
In a bowl add eggs, a pinch of salt, and 1 ½ tsp of cajun seasoning and whisk.
In another bowl add all-purpose flour, coconut flour, and cornmeal pinch of salt and the remaining cajun seasoning together and mix in.
Add oil to the frying pan on medium heat. (pour up to 2 inches of the pan)
Dip Okra in egg mixture then in the flour mix, dust off the excess flour mix and add to the frying pan.
Fry for around 3-4 minutes or until brown or crispy.
Notes
If you didn’t smash the okra fry them for a longer time. Make sure to turn the okra at least once to get all sides.
