What’s Up Doc, blend of ginger and carrot with bourbon and amaro. Combine it gives such a wonderful flavor with the sweetness from the carrots and spicy and woody taste notes from the ginger and the herbaceous flavor of the Amaro.
I discovered this drink while surfing the internet. I have never heard about it, but the name What’s up doc? reminded me of “Bugs Bunny” the cartoon and immediately when I looked at the ingredients I saw that it called for carrots and I was just like awesome! I am doing this.
I notice that there are different variations of this cocktail. However, I went with using Amaro and bourbon because why not? Such a flavourful and herbaceous combination.
What is an Amaro?
Amaro is an Italian herbal liqueur that is also known as bitters or a digestive. It is usually served as an after-dinner drink to help settle the stomach. Its flavors are usually bitter, sweet with some sort of herbaceous note.

This is my favorite drink. Combine together, ginger and carrot give such a wonderful flavor with the sweetness from the carrots and spicy and woody taste notes from the ginger.
How to make Ginger Syrup
1 cup granulated sugar
1 cup water
¾ juiced/blended ginger
Add the ingredients in a pot and boil until the texture becomes runny. (Don’t over boil)
I make my ginger syrup different from how other people make theirs. I use juiced ginger. I feel as though when you use ginger pieces the ginger syrup is not potent enough and most of the ginger is wasted.

Carrot Juice
You can buy carrot juice but I would just juice fresh carrots. It’s so simple.

Ingredients
- 1 oz Bourbon or Rye Whisky
- 1 oz Lazzaroni Amaretto
- 1 oz fresh carrot juice
- 1 oz honey ginger syrup
- 3/4 oz fresh lemon juice
- Ice
- fresh rosemary to garnish
Instructions
- Add all the ingredients in a shaker and shake vigorously.
- Strain over ice in a glass of choice.
- Garnish with a herb
